Oven potatoes with tomatoes and onions

Ingredients for cooking potatoes in the oven with tomatoes and onions.

  1. Red onion 1 piece (large)
  2. Bulgarian pepper (multi-colored) 3 pieces
  3. 4 garlic cloves
  4. Potato 600 grams
  5. Tomatoes 400 grams
  6. Chili (cereal) 1 teaspoon
  7. Dried herbs (thyme, basil, rosemary) 1 teaspoon
  8. Salt to taste
  9. Ground black pepper to taste
  10. Olive oil to taste

Inventory:

Cooking:

Step 1: prepare the vegetables.


Peel the onion, cut into large pieces and put in a deep plate. Add to it chopped into thin slices garlic, as well as coarsely chopped bell pepper. Drizzle with olive oil, add chili peppers and dried herbs. Mix well and set aside for now.
At the same time, rinse, peel and boil the potatoes. But cook for a short time, literally 10-12 minutes after boiling, so that the vegetables become only a little softer. After cooking, cut the potatoes into quarters.
Wash the tomatoes and cut them into quarters, just like potatoes.

Step 2: bake potatoes with tomatoes and onions in the oven.


Preheat the oven to 200 degrees.
Put potatoes and a mixture of onions with pepper and garlic on a baking sheet, salt, pepper, pour olive oil and send to bake (I also lightly grease the baking sheet first).
Bake 15-20 minutes, then add tomato slices to vegetables and bake still 20 minutes, or until the potato acquires a beautiful golden color.

Step 3: serve the baked potatoes with tomatoes and onions.


Serve baked potatoes with tomatoes and onions and serve hot. Vegetables have an amazing aroma and taste. I can serve them as a side dish or main course for lunch and dinner. And even on the festive table, the vegetables baked according to this recipe look just perfect. Garnish before serving with fresh basil and enjoy.
