Khinkali with meat. Georgian cuisine


  1. Flour 1 kg
  2. Water 450 ml.
  3. Salt 2 tsp
  4. Minced meat 650 g
  5. Onions 300 g
  6. Garlic 20 g
  7. Ground black pepper 1/2 tsp
  8. Sunli hops 1 tsp
  9. Red pepper flakes 1/2 tsp.
  10. Salt 2 tsp
  11. Water 150 ml.
  12. Cilantro 30 g

Step 1.

In a bowl with flour add 2 tsp. salt and mix well, add 450 ml. water and mix thoroughly.

Step 2

Put the kneaded dough on the board and continue kneading for 15 minutes until smooth. Cover the dough or put in a bag and leave for 30 minutes at room temperature.

Step 3

Grind onions and garlic.

Step 4

Add 2 tsp to the minced meat. salts, hops suneli, ground black pepper, red chili pepper flakes, finely chopped cilantro and 150 ml. water, mix well and put the minced meat in the refrigerator for 30 minutes. If the meat completely absorbs all the water, you can add another 50 ml. water and mix.

Step 5

After 30 minutes, remove the dough from the bag and still knead the dough for 10-15 minutes, the dough should become elastic and smooth.

Step 6

From a half of the dough we make a “sausage” and cut it into identical pieces of about 40 g.

Step 7

Each piece is rolled out with a rolling pin into a circle with a diameter of about 15 cm, the edges are rolled thinner than the middle.

Step 8

In the center of the circle we put 1 tbsp. forcemeat and pinch the dough into folds, pinch the folds on top of each other, then collect all the folds into a “bundle” and gently pinch the top to fix the dough, cut off the tops with 0.5 cm knife.

Step 9

Add salt to boiling water to taste. Submerge khinkali in boiling water only one at a time, then mix with a wooden spoon. After the khinkali emerge, cook for 12 minutes.
