Grate hard cheese.
Mix grated cheese with butter, flour, optionally add a pinch of salt (if the cheese is not too salty). Combine all the ingredients in a lump, no need to knead the dough. Place the dough in a bag or plastic wrap and leave in the refrigerator for 20 minutes.
Roll out a layer 0.5 cm thick. Cut cookies. You can watch in the video how I made cookies in the form of pieces of cheese.
Bake at 180 degrees for 12-15 minutes until golden.
