Meat hodgepodge


  1. Meat (flesh and bone) 600 g
  2. Onion medium 250 g
  3. Carrot medium 200 g
  4. Water 2 liters
  5. Peelless pickles 350 g
  6. Tomato paste 3 tbsp
  7. Capers 1 tbsp
  8. Black olives 60 g
  9. Smoked sausage 70 g
  10. Sausages 2 pcs.
  11. Ham 70 g
  12. Smoked chicken 50 g
  13. Smoked beef 60 g
  14. Sausage 60 g
  15. Cucumber pickle 150 ml.
  16. Salt to taste
  17. Ground black pepper to taste
  18. Sugar 1 tbsp
  19. Vegetable oil 2 tbsp

Step 1.

Put meat, 1 carrot, 1 onion in a saucepan, pour 2 liters of water and bring to a boil over high heat, remove the foam and reduce heat, close the lid and cook the broth for 1 hour over low heat.

Step 2

Cut the peeled pickles into small cubes, cut the carrots into small strips, and cut the onions in half rings.

Step 3

Heat 2 tbsp in a pan vegetable oil and put onions, fry over high heat for 1 minute.

Step 4

Add carrots to the pan and fry for another 1 minute over high heat.

Step 5

Add chopped cucumbers and tomato paste, mix everything and add sugar, 150 ml. cucumber pickle and 200 ml. water, reduce heat and simmer with the lid closed until the cucumbers are ready, about 30 minutes. Cucumbers should become soft.

Step 6

From the finished broth, get meat and vegetables, cut the meat into small pieces. Put fried cucumbers, carrots, onions and tomato paste into the broth, bring to a boil and cook for 5 minutes over low heat.

Step 7

Put meat and sausages into slices in a pan.

Step 8

Add olives, capers, salt and pepper to taste, cook for another 3 minutes.

Step 9

Before serving, put a slice of lemon in a plate with hodgepodge. Serve with sour cream and fresh herbs.
