Divide the cottage cheese into two servings. One (250g) is needed for the test, the second (150g) - for the filling. To start, prepare the dough. Add to the cottage cheese 2 tbsp. sugar, yolks and mix well. Add salt, soda and gradually adding flour, knead the dough. First with a spoon, then with your hands. The test should be a little sticky. Do not “hammer” it with flour. Roll the dough into a ball and send it in the refrigerator for 1-1.5 hours.
In the cottage cheese for the filling, add 2 tbsp. sugar and grind it well. Roll the dough on a well-sprinkled flour table. Smudge the cottage cheese in half the dough. If the cottage cheese is dry, you can add sour cream or an egg to it. But 9% and above do not require additives. Cover the second half of the dough. Get a big cheburek))). Roll into a roll. Try as tight as possible. Cut into round pieces with a thickness of about 1-1.5 cm
